The Healthy Recipes


My friend Beth made this fabulous salad, and I begged her for the recipe.  It was a little too high in fat and sugar originally, but it's been revised, and is still delicious, but now this great salad is low fat and sugar free!


 

Spinach Strawberry Salad
What you need:            
Salad: 
8 cups fresh spinach           
1 cucumber (peeled and cored)          
1 pint strawberries (sliced) 
1/4 cup toasted almonds
1/3 cup mushrooms 
Dressing: 
2 tablespoons white wine vinegar
2 1/2 tablespoons fresh lemon juice  
1 tablespoon applesauce  
3 tablespoons unsweetened orange juice concentrate
1 teaspoon poppy seeds
 
What you do:  
Toss all the salad ingredients together
In a separate bowl, combine the dressing ingredients
Spoon the dressing over the salad and serve immediately.

keep the dressing separate and mix as you munch.
